What follows is a previously top secret recipe for the sweetest, diabetes inducing Scottish delicacy called ‘Tablet’. It’s my Granma Broons own recipe!

Ingredients
2 lbs of granulated sugar (about 1 kg)
1 tin of condensed milk (about 397 g)
4 ounces butter (about 113 g)
1 cup of milk (about 250 ml)
Method
- Lightly butter a baking tray in advance – you’re not going to have time to do it while preparing the mixture!
- Put all the ingredients into a heavy pan and apply a low heat, stirring constantly until everything melts and mixes
- Avoid applying too much heat regardless of your impatience! Once bubbles start to form on the outside of the mixture, set a timer for 12 to 15 minutes and stir CONSTANTLY. It will stick to the bottom of the pan if you don’t keep stirring!
- Take the mixture off the heat and beat with a wooden spoon for a minute or so, until the mixture is velvet smooth
- Pour the mixture into the baking tray and leave to set slightly
- Mark lightly in squares and put into the fridge to set hard
- After it’s set, cut into squares and consume vigorously
- Book an appointment with the dentist and a personal trainer
Secrets to success are:
- Keep the heat low or you’ll burn the mixture
- Stir constantly or the mixture will stick to the pan
- Don’t over cook, or the result will be brittle and crumbly
- Don’t under cook, or the result will be gooey and won’t set
